Servings: 15 to 30 (allows 1/4 lb. (.25 kg) per person)
Preparation time: 30 minutes
Cooking Time: 60 minutes
- 3 to 6 lbs. (1 to 2 kg) of medium chicken wings
- 2 teaspoons (30 ml) olive oil
- 1 teaspoon (14 g) salt
- 1 teaspoon (4.7 g) garlic powder
- 1 teaspoon (4.7 g) black pepper
- 1 teaspoon (4.7 g) red pepper
- 1 teaspoon (15 g) unsalted butter, melted
- 1/4 teaspoon (1.1 g) red pepper
- 1/4 teaspoon (1.1 g) freshly ground black pepper
- 1/4 tablespoon (1.1 g) salt
- 1/4 c. (60 ml) hot sauce
Prepare the Wings:
- Place your baking pan in the center of your oven and preheat the oven to 375 ° F (190 ° C). Make sure your baking pan filled with chicken wings is left in the middle of your oven so the air floats evenly around the pan while the wings are baked.
- Cover a baking pan or a cookie sheet with foil.
- Place a baking pan on top of foil. This is not strictly necessary, but placing the wings in the pan will keep the meat away from the fat that forms while baking.
- Wash the wings with cold water coming out of the tap. If you prefer, you can cut the tips of the wings using chicken scissors and cut the wings in 2 parts. (Discard the tips.)
- Place the washed wings on a triple paper towel.
- Put three paper towels on top of the wings. Press the towels to absorb the water.
- Prepare another set of 3 paper towels and move the wings to it.
- Shake the wings with a new set of dry paper towels. (If necessary, repeat the process until the wings are completely dry.)
- Combine the oil and spices in a large mixing bowl.
- Add the wings to the oil and spice mixture, and turn them to cover. Make sure all parts are completely covered with oil and spices.
- Place the wings in the pan. Try not to overlap them to cook evenly.
- Examine the wings. If some of them do not appear to be sufficiently covered, you can pass them through the bottom of the mixing bowl to add additional coverage.
- Bake 50 to 60 minutes. Check wicks 50 minutes later to make sure they are not burning and drying.
Prepare the Spicy Dressing:
- Mix the melted butter, salt, and peppers in a mixing bowl.
- Remove the hot sauce.
- Pour the sauce into dressing bowls. You can also place the wings in the spicy sauce (use a large bowl) and serve.
We put the tray in the oven which we have already preheated previously to a temperature of about 180º and selected both the lower and the upper heat source. We let it be done for about 25 or 30 minutes, (Times will vary depending on the type of oven and the quantity or size of the meat). About 15 minutes we will turn the wings to put all with the area of skin up and water with a glass of white wine.
After how long to bake chicken wings, you have learned also how to make the sauce. You can make the dressing up to a week in advance. Keep it refrigerated until you use it, and then heat it in the microwave or on low heat on the stove. Experiment with different spices. Try adding or replacing chili powder, rosemary, soy sauce, honey or pepper.
Check the wings while cooking; as they can dry quickly. Covering them while cooking may be tempting, but it is best not to cover them with paper or lid as they are baked because they will not be very crispy.
