How to make Mexican rice:
- 1 tablespoon extra virgin olive oil or canola
- 1 cup white rice
- 2 cloves garlic, chopped
- 2 cups water or chicken broth
- 1/2 cup chopped white onion
- 1 tomato chopped into 4 equal pieces
- 1/4 cup tomato sauce or pasta
- 1 teaspoon cumin
- 1 teaspoon chicken broth powder
- 1 jalapeño or the chilli of your preference
- Lime slices
Parboiled Rice to Mexico:
- 1 cup short grain white rice
- 3 tablespoons olive oil
- 1 chopped onion
- 1 clove garlic, chopped
- 1 teaspoon chopped basil
- 1 teaspoon finely chopped onion
- Salt and pepper to taste
- 1/2 cup of Mexican sauce
- 1 chilli of your chopped preference
Steps for How to Make Mexican Rice:
Method 1: Mexican Rice:
- Put 1 tablespoon extra virgin olive oil or canola oil in a large heavy-bottomed pan. Heat the oil, then add 1 cup of raw white rice to the hot oil. The pan should be covered with oil evenly.
- Stir the rice with oil, and then cook until it begins to brown. Once the rice starts to brown, continue cooking it, stirring frequently so that it does not burn. Cook until the rice is evenly browned.
- Chop 2 cloves of garlic. Add the garlic to the rice when the rice is almost golden.
- Pour 2 cups cold water or chicken stock into the golden rice. Add 1/2 cup chopped white onion, 1 tomato chopped into 4 equal pieces, ¼ cup tomato sauce or pasta, 1 teaspoon cumin, 1 teaspoon chicken broth powder and 1 jalapeño or the chilli of your preference.

- Cook until the rice is dry, light and fluffy. The rice should not stick.
